Mushroom Crepes in Brie Sauce

Serving Size: 4

Cooking Time: 20 minutes

Prep Time: 5 minutes

Ingredients:

3 tbsp butter + 2 tbsp butter

3 cups sliced mixed mushrooms

1 ½ cups baby spinach

A pinch of coriander powder

Salt to taste

1 shallot, chopped

¼ cup dry white wine

1 ½ cups heavy cream

½ cup chicken stock

2 ½ cups Brie cheese

1 tbsp chopped cilantro

12 crepes

Instructions:

1. For the filling – melt 3 tablespoons of butter in a skillet and sauté the mushrooms until softened, about 6 minutes. Add the spinach to wilt and season with the coriander and salt. Turn the heat off and set aside.

2. For the sauce – melt the remaining butter in a medium saucepan and sauté the shallot until softened, about 3 minutes. Mix in the wine and allow boiling and reducing by half. Add the heavy cream and chicken stock, and simmer for 3 minutes. Stir in the cheese and cilantro until the cheese melts. Turn the heat off.

3. Lay the crepes on a plate, fill one side of each with the mushroom mixture, and fold the crepes into triangles.

4. Share the crepes into serving plates and spoon the sauce generously over.

5. Serve immediately.
